Shelf Life Testing a Chilled a Food Product

 SHELF LIFE TESTING FOR CHILLED PRODUCTS  

The following is the suggested temperature profile for treating your chilled products when you need to check their shelf life.

 1.         Three days at 5ºC                   This simulates the situation at the manufacturer’s premises

 2.         Three days at 8ºC                   This simulates the situation at the retailer’s premises

 3.         Two hours at 20ºC                  This simulates the product being transported home by the consumer

 4.         Three days at 8ºC                     This simulates the situation in the domestic fridge
